Manual grape harvest and selection. Delicate pressing of whole bunches and racking by natural sedimentation. Slow fermentation at controlled temperature. |
Refinement |
Aged for 9 months on fine yeasts, partly in large wooden barrels (50%) and partly in stainless steel vats (50%). Assembled three months before bottling. |

The bouquet of this Sauvignon is exotic and captivating, with multiple fruity notes of mango, papaya, lime and red grapefruit, but also aromas of herbs such as lemongrass, lemon balm, mint and green tea. In addition, there is a hint of gooseberry and mineral glazes of flint. |
