The taste is lively and extremely personal, and contains the essence of a refined femininity. A unique bouquet of its kind, aged just enough to offer the palate a new, modern, classy flavor. The “Piancastello” Reserve is a Brut Spumante produced in a real cru on the Endrizzi estate. The Pian Castello vineyard is located on a terraced plateau halfway up the hill, well exposed and completely surrounded by woods. Here, Chardonnay and Pinot Noir have been grown for over thirty years with clones from Champagne, which produce low yields of 50 quintals per hectare.

Winemaking and Refinement
|
The first fermentation is carried out for part of the wine in barrique and part in steel. The method used for refermentation in the bottle is the classic one foreseen by Trentodoc. On the yeasts it lasts at least 48 months in order to obtain an otherwise unattainable elegance. The “dosage” is minimal, so as not to alter the characteristics naturally conferred by very favorable environmental factors, by time and by a particularly careful artisanal workmanship.
