NATURALLY AUTHENTIC! Chardonnay, Pinot Noir. Maturation on the lees for at least 48 months. Lively, minute and continuous perlage. The taste is dry, clean, elegant, savoury, enveloping, with a pleasant persistent fresh note. No “dosage” is added at disgorgement, so as not to alter the characteristics naturally conferred by the very favourable environmental factors of the Pian di Castello vineyard, by time and by a particularly careful artisanal workmanship. Like any classy Trentodoc, it is an excellent aperitif and can be enjoyed throughout the meal.

The bunches, subjected to thinning in July, are harvested by hand in crates, to ensure their integrity until pressing. The first fermentation is carried out in steel. The method used for refermentation in the bottle is the classic one provided for by TrentoDOC. Maturation on the yeasts lasts at least 48 months to obtain an otherwise unattainable elegance. No “dosage” is added at disgorgement, so as not to alter the characteristics naturally conferred by very favorable environmental factors, time and a particularly careful artisanal workmanship.
