Winkl Sauvignon Blanc is a savoury, slightly fruity and minerally wine that has been vinified as a single varietal since 1956. This grape variety has been successfully grown for a long time in the Terlano DOC area, especially around the older farms. |

Manual grape harvest and selection. Gentle pressing and racking by natural sedimentation. Slow fermentation at controlled temperature in stainless steel tanks. |
Refinement |
Aged for 7-8 months on fine yeasts partly in stainless steel vats (80%) and partly in large wooden barrels (20%). |

The fruity aromas of apricot, mandarin and passion fruit stand out, overlapping with the aromatic olfactory components of elderflower, gooseberry and mint. |

On the palate, the fruity taste already perceived in the bouquet is confirmed, accompanied by a delicate acidity. What is most convincing is the good structure and the aftertaste, mineral and at the same time rich in aromas. |

Food pairings |
In spring, an interesting pairing of this wine is with boiled white asparagus on Bolzano sauce, or even with steamed green asparagus. Otherwise, tuna carpaccio, smoked salmon or raw scampi. A typical South Tyrolean combination is with nettle dumplings, with steamed trout on mixed vegetables, or with unripe goat cheese. |
