🍇 Vinification and Aging The grapes are harvested manually at the end of September and subjected to traditional maceration in stainless steel for about 10-12 days. After malolactic fermentation, the wine ages for about 12 months in oak barrels, followed by a further period in the bottle, which helps develop a complex and harmonious aromatic profile.
