On the southern slope of Monzoccolo, in the DOC Terlano area, there are sunny and steep vineyards where, at an altitude between 450 and 650 meters above sea level, an exciting Pinot Blanc is grown. This full-bodied and extremely complex wine is particularly striking with its minerality, its remarkable capacity for development and thus underlines the potential of this variety. |

Winemaking technique |
Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at controlled temperature and delicate movement of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). |
Refinement |
For the refinement in barriques, one third of the barrels are new. Assemblage three months before bottling. |

Perfume |
This wine has a very varied and multifaceted bouquet, with ripe fruity notes of melon, white peach, pear or delicious apple, but also aromas of quince jelly, chamomile and pineapple, alongside mineral notes of flint. |
Taste |
The combination of fruity, aromatic and salty taste components is also repeated on the palate. The compact structure with an elegant creaminess blends into a very aromatic, persistent and distinctly mineral aftertaste. |

Food pairings |
It is ideal in combination with spicy fish soup, peppered mussels or spaghetti allo scoglio, but it is also interesting to pair it with mussels au gratin, grilled cuttlefish or char, and it also goes well with Roman-style artichokes - usually difficult to pair - with mature pecorino, or aged parmesan with mustard or Téte de Moine. |
