Cantine Silvestri originates in the heart of the Castelli Romani, where the wine culture and passion for the traditions of the past maintain their flavor intact. The story begins in 1929 in the heart of Genzano di Roma, where the founder Alfredo Silvestri began the winemaking and bottling of the wines of the Castelli Romani. Passion, as well as experience and professionalism, have been handed down from generation to generation and today Cantine Silvestri is led by his grandson Alfredo. A soft wine like the Otium (free time) that our ancient Roman ancestors came to spend on the Alban Hills. A balanced taste of history on the territory. |

Winemaking and refinement technique |
Destemming, crushing, maceration for 7-8 days at a temperature of 23-25°C, racking and soft pressing. Cleaning of the wine by decantation, refinement in stainless steel tanks at a controlled temperature. After bottling, a period of refinement in the bottle follows before being put on the market

Appearance: Ruby red with good chromatic charge and violet reflections.
On the nose: Good intensity, delicate and ripe fruit, notes of cherry and raspberry.
