Made entirely from Sagrantino grapes, the signature variety of Montefalco known for its great power and personality, it was born from the challenge of taming its tannic exuberance to obtain a wine ready just a few months after the harvest, while preserving its freshness and vitality.

Maceration, carried out with whole berries for a few days and without pump-overs, allows the grape's natural polyphenol heritage to be highlighted.

It is a lively wine, capable of evolving and offering new nuances with every sip.

The result is a persuasive and surprising wine with a vivid color and aromas of chestnut honey, resin, and licorice. On the palate, it captivates with its velvety and balsamic character.

The Di Filippo winery, located between Cannara and Montefalco, is one of the most representative examples of organic farming in Umbria. The vineyards are cultivated following sustainable agroforestry practices: horses are used for work between the rows, while geese contribute naturally to weeding and fertilizing the soil, fostering biodiversity and respect for the ecosystem. All wines are also vegan, thanks to a production process that does not involve the use of animal-derived proteins.

Vinification takes place using whole clusters, without moving the wine during maceration, so as to naturally limit oxidation and enhance the grape's aromatic profile. Aging continues for at least 6 months in steel on fine lees. The wine is neither filtered nor stabilized, thus maintaining all its vitality and authenticity; any sediment at the bottom of the bottle is completely natural.
