Spontaneous fermentation in small concrete tanks for approximately 15/18 days with several daily pumping overs and délestage.

Tasting notes
|
Bright ruby red.
The aromas are vinous when young and then transform with age into ripe plum on a slightly herbaceous background. The taste is dry, soft, balanced with a pleasantly bitter finish. Good aromatic persistence that expresses great elegance.
