Vinification: Pressing of the bunches. Fermentation in steel vats.
Maceration of the Pinot Noir for several hours in contact with the skins. The cuvée is prepared in the spring following the harvest, with the addition of 5% reserve wine composed of the blend of the previous vintage and aged in stainless steel. Second fermentation in the bottle and subsequent aging in contact with its own yeasts for
at least 24 months, followed by another two months after disgorgement.
