The NONSO2 Grechetto Umbria IGT Organic from Di Filippo Azienda Agraria represents one of the highest expressions of natural Umbrian viticulture. Made from 100% Grechetto grapes, it is produced without the addition of sulfur dioxide during winemaking, preserving the authenticity of the fruit and the territory. The wine is organic, vegan, and unfiltered, thus retaining all its aromatic and gustatory integrity.
Di Filippo, located between Cannara and Montefalco, is a benchmark for organic and biodynamic agriculture in Umbria. For over twenty years, it has cultivated its vineyards with sustainable practices, using horses for vineyard work and geese for natural weed control, according to an innovative agroforestry system that promotes biodiversity.
Fermentation occurs spontaneously with indigenous yeasts at low temperatures, with no added sulfites. The wine ages for at least six months on its fine lees in stainless steel tanks, acquiring complexity, structure, and a pleasant mineral expression. Thanks to the lack of filtration, it maintains an authentic profile and may present a slight natural sediment, an indicator of its genuineness.
The result is a white wine with a decisive yet extremely balanced character, ideal for those seeking natural, organic, and environmentally friendly wines without compromising on quality and elegance.
