The grapes were harvested slightly overripe and vinified in thermo-conditioned stainless steel tanks. Maceration, carried out at temperatures no higher than 26 °C, lasted about 8-10 days. Malolactic fermentation was completed by the beginning of winter. This was followed by a maturation period in steel of about 8 months and a refinement in bottle of 4 months. |
