Winemaking and Refinement |
The grapes are selected and gently pressed, so as to extract only the free-run must. Fermentation takes place in steel tanks at a controlled temperature. The base wines mature for a few months without undergoing malolactic fermentation. The second fermentation takes place in the bottle according to the Classic Method, with an aging on the lees for at least 18 months. |
