The harvest takes place at full ripeness in September. The grapes, selected in the vineyard, are then taken to the cellar to be vinified. After pressing, the must obtained is statically decanted at a temperature of 10°C and fermented with selected yeasts at a temperature of 18-20°C. Once the alcoholic fermentation is complete and the racking is carried out, the wine is left to refine sur lie for 5 months in stainless steel wine vats before bottling. |
