🍇 Vinification and Aging
The Nebbiolo grapes are harvested manually and subjected to a long maceration at a controlled temperature to extract structure and complexity. Malolactic fermentation occurs naturally in steel. The wine then ages for at least 24 months in large oak barrels, according to the classic Barolo style, and further refines in the bottle before being released for sale, to best express the characteristics of the Serralunga d'Alba terroir.
