From a denomination that boasts almost a century of history, a wine with soft, velvety tannins, great freshness, deeply linked to its production area. In 2021, the development of the vine was conditioned by an initially dry spring and then cool and rainy; these climatic conditions favored a slowdown in the vegetative development of the vines with a delay in flowering of two weeks compared to average. The summer was hot and characterized by rains well distributed throughout the season. At the time of harvest, the grapes had a good balance between acidity and sugars and excellent aromatic potential thanks to the high temperature range between day and night during the last weeks of ripening. |

Winemaking and Refinement | The harvested grapes, upon arrival at the cellar, underwent different vinification processes; part of them underwent maceration for 7-8 days, with maximum temperatures of 25 °C, to enhance the extraction of soft tannins and the maintenance of the fruity aromas of the grapes. The other part, the most consistent, underwent a longer maceration, of 10-12 days with temperatures of 30 °C and soft wetting, in order to increase the intensity of the taste. After malolactic fermentation, which took place in November, the wine was refined in stainless steel tanks. The Chianti Superiore Santa Cristina was bottled starting from the middle of April. |
