Manual grape harvest and selection. Gentle pressing and racking by natural sedimentation. Slow fermentation at controlled temperature in large oak barrels (30 hl). |
Refinement |
Partial malolactic fermentation and refinement for 10 months on the yeasts partly in stainless steel vats (50%) and partly in large wooden barrels (50%). |
