A true family gem. A TrentoDOC that has long been guarded and reserved exclusively for the family and that was disgorged à la volée. On the occasion of its 130th anniversary, Endrizzi wants to share this particular zero dosage cuvée with those who can appreciate its uniqueness. After a long maturation of at least 84 months on the lees, it displays elegant and mature aromas of white tobacco, candied fruit and licorice, together with spicy notes combined with a lively minerality.

Winemaking and Refinement
|
The whole and healthy bunches are unloaded directly into the press. It is fermented without decantation partly in small French oak and Hungarian acacia barrels and partly in steel. The batonnage is carried out weekly until the end of December, the refinement in wood and steel of the sparkling base continues until June. The refinement on the yeasts continues for at least 84 months.

It presents itself with a thin and persistent perlage. Its bright and luminous golden yellow color recalls the long refinement.

Perfume
|
On the nose it is rich, ethereal and extremely elegant. The sensations of blond tobacco and bread crust mix with those of nutmeg and apricot with a base note tending towards ripeness that enhances its pleasantness.

Taste
|
Very rich, enveloping, interesting and savoury on the palate; long aftertaste with hints of licorice and rhubarb.
