January and February 2021 were characterized by a couple of weeks where minimum temperatures remained steadily below 0°C, contributing to delaying the vegetative awakening, despite March being a decidedly mild month. Ribolla Gialla completed its budding even at the end of April. The first vegetative phases were slowed down by a cold May with rainy days, while the sun in June stimulated rapid growth of the vegetation, developing a correct leaf surface. The flowering of Ribolla Gialla began 15 days later than the historical average. July and August were months characterized by significant temperature variations, with sufficient rainfall to hydrate and maintain correct vegetative-productive development in all varieties. The harvest of Ribolla Gialla began in the last ten days of September. Thanks to the dry and sunny end of summer, the grapes were able to ripen slowly, accumulating more sugars than in recent years. |

Winemaking and Refinement |
The must obtained from the soft pressing of the grapes is left to decant for 24-48 hours. Alcoholic fermentation then begins on the clear must, conducted at 15°C for 20 days. The vinification is carried out in steel containers, keeping the wines at low temperatures, thus avoiding malolactic fermentation. After fermentation, the wine rests for 4 months on the noble lees which are frequently put into suspension. |
