The 2022 vintage was characterized by winter and spring periods
generally warm and dry. Starting from the month of June, also characterized by the absence of rainfall, there were peaks in temperature; these climatic conditions did not cause particular stress to the vines thanks to the soil and climate conditions present in the vineyards of Castello della Sala. The rains of the first days of August rebalanced the situation
in the vineyard, ensuring that optimal maturity is achieved.
The dry climate of this vintage has guaranteed the perfect integrity and health of the grapes, allowing to limit the interventions in the vineyard to a minimum and giving healthy, balanced fruits characterized by a good aromatic profile.
The harvest of Chardonnay for Cervaro della Sala, considered to be of exceptional quality, began during the third week of August, with ripe grapes characterised by excellent freshness and an excellent aromatic profile.
The Grechetto harvest took place after 3 weeks, towards the middle of September.
The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and refinement in barrique with the first vintage in 1985.
