Trento Spumante Riserva “Piancastello” is a fresh and elegant Classic Method, made with Chardonnay and Pinot Noir grapes. The aging on the lees for at least 3 years gives the bouquet, in addition to the mineral freshness typical of the terroir, also a good personality and an expressive complexity. Riserva “Piancastello” is a Brut Spumante produced in a real cru on the Endrizzi estate. The Pian Castello vineyard is located on a terraced plateau halfway up the hill, well exposed and completely surrounded by woods. Here, Chardonnay and Pinot Noir have been grown for over thirty years with clones from Champagne, which produce low yields of 50 quintals per hectare.

Winemaking and Refinement
|
After manual harvesting, the grapes are very softly pressed in whole bunches and the free-run must is fermented, partly in stainless steel and partly in barriques. After a few months of aging, the base wines are assembled to create the cuvée. The subsequent period of aging in the bottle on the lees lasts 36 months before proceeding to dégorgement.
