Cantine Silvestri originates in the heart of the Castelli Romani, where the wine culture and passion for the traditions of the past maintain their flavor intact. The story begins in 1929 in the heart of Genzano di Roma, where the founder Alfredo Silvestri began the winemaking and bottling of the wines of the Castelli Romani. Passion, as well as experience and professionalism, have been handed down from generation to generation and today Cantine Silvestri is led by his grandson Alfredo.
Born on the hills around Rome: classic and elegant, strong and muscular, Cesanese is the undisputed king of the Castelli Romani.

Winemaking and refinement technique |
The grapes are harvested manually, pressed and destemmed. Before fermentation, a cold maceration is done (0-4°C), after 48 hours the grapes are brought to 20-23°C and inoculated with selected yeasts and left to macerate in fermentation for another 10-15 days. This is followed by racking, soft pressing and refinement first in steel and then in oak barrels. |

Appearance: Ruby red. On the nose: Intense fruitiness of small wild berries, roasting and spices, blueberries, coffee, cocoa and leather.
On the palate: Dynamic and enveloping, with an important structure and velvety tannins, with great balance between body and freshness. Long persistence on notes of small red fruits and coffee.
