The wine is named after the first owners of Castello della Sala and the label features a drawing of the 13th century Chapel of San Giovanni located on the property. The first vintage of Conte della Vipera produced was 1997. |

Winemaking and Refinement | The bunches, harvested by hand, were immediately transferred to the cellar and cooled before pressing in order to preserve the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 °C to allow for natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature no higher than 16 °C. Once this operation was completed, the wine was stored at a temperature of around 10 °C to prevent malolactic fermentation and to preserve its organoleptic characteristics unaltered. The two varieties were then combined so that one could “complete” the other. Fresh, vertical, slightly aromatic the Sauvignon Blanc, soft and tropical the Sémillon. |
Tasting Notes |
Conte della Vipera has a straw yellow color with bright green highlights. The nose is broad and pleasant with floral notes, white fruit and pineapple that combine with pleasant citrus sensations. On the palate, a pleasant freshness gives way to a particularly long finish characterized by sensations of bergamot and grapefruit. |
