Winemaking and Refinement | The delicate defoliation and thinning operations in the vineyard, followed by careful manual selection of the grapes, have guaranteed the vinification of grapes of good quality and varietal identity. During the process of fermentation in truncated cone-shaped tanks, the musts were macerated with extreme attention to the freshness of the perfumes, the extraction of colour and the management of tannins aimed at sweetness and elegance. Once separated the skins from the wine, malolactic fermentation was started in barriques, enhancing the finesse and pleasantness of the aromas. Thus began the aging process which lasted approximately 12-14 months, in French oak barrels and Hungarian, partly new and partly first passage. The different lots, vinified separately according to the variety, They were aged in wood and then assembled a few months before bottling. |
