Vinification: Initial fermentation in stainless steel. The cuvée is prepared in the spring following the harvest, with the addition of 20% reserve wines, carefully divided between Chardonnay and Pinot Noir. Secondary fermentation in the bottle and subsequent aging on its lees for at least 24 months, followed by another two months after disgorgement.
