🍇 Winemaking and Refinement
The grapes are harvested by hand and subjected to a soft pressing to extract only the free-run must. Fermentation takes place in steel tanks at a controlled temperature, without malolactic fermentation, to preserve freshness and natural acidity. The second fermentation takes place in the bottle according to the Classic Method, with an aging on the lees for at least 24 months, giving complexity and finesse to the wine.
