The Classic Panettone by Pasticceria Calciano was born in Tricarico, in Basilicata, from a passion for artisanal pastry and the search for high-quality raw materials.

The secret to its preparation is the natural sourdough, refreshed four times a day, which helps give the dough a soft, light, and fragrant texture. The traditional recipe is enhanced with Chilean jumbo raisins macerated in aged rum, and Sorrento IGP orange and lemon peel.

The selection of ingredients includes stone-ground soft wheat flour, Normandy cow's milk butter, fresh egg yolks, acacia honey, and Madagascar vanilla. A meticulous preparation that enhances the tradition of great Italian leavened cakes.

The panettone is offered without icing, to fully showcase the fragrance of the dough and the balance between the sweetness of the raisins and the aromatic notes of the citrus fruits.
