Description

The 2023 vintage began with a rainy January and a dry and cold February.
The evolution of the end of winter and beginning of spring was favorable for a budding in line with the historical average for Pinot Grigio vineyards.
Spring was a season characterized by frequent rains that have particularly engaged us in this beginning of vegetative development. The meticulous selection of the shoots, the longer maintenance of the green manures and good ventilation on dry days, have contributed to maintaining the vineyard in a good state of health.
The summer was hot but never torrid, with several more or less intense rainfalls that periodically rehydrated the soil.
The seasonal fluctuations delayed the ripening of the grapes; the Pinot Grigio harvest began only in early September, with grapes less rich in sugars than average but with a good content of malic and tartaric acid.

This year the Pinot Grigio had more sparse bunches. We split the harvest into as many days as possible, thus managing to maintain a good balance between sugar content and acidity in the musts, which already from the first days of fermentation released excellent aromas.

Winemaking and Refinement

As soon as they arrive at the cellar, the grapes are delicately pressed. The white juice that we obtain is left to decant for 24-48 hours. Alcoholic fermentation then begins on clear must, conducted at low temperatures (15-17°C) for 15 days. The vinification is carried out in steel containers and barriques (10%), keeping the wine at low temperatures, avoiding malolactic fermentation. After fermentation, the wine rests for 4 months on the noble lees that are constantly put in suspension

Perfume

The 2020 brings us a Pinot Grigio that is vibrant on the nose; apple and lime zest emerge decisively in a finely spiced bouquet of vanilla and white pepper.

Taste

On the palate it is fresh, with a lively acidity that highlights the excellent complexity of this Pinot Grigio. In the citrus finish pleasant mineral sensations emerge.
