Winemaking and Refinement
|
The soft pressing of the whole bunches occurs quickly to avoid any type of oxidation. The first fermentation is carried out cold in steel tanks. The method used for the refermentation in the bottle is the classic one foreseen by Trentodoc. The maturation on the yeasts lasts at least 24 months in order to keep intact the fragrance of the original wine. The dosage is minimal, so as not to alter the typical characteristics of freshness of Trentodoc
