The bubbles in the glass, known as perlage in winemaking jargon, represent a fundamental distinguishing element for the types of sparkling and spumante wines.
It's not just an aesthetic aspect: the bubbles significantly influence the taste perception, giving freshness, vivacity and a consistency on the palate that is clearly different compared to still wines.
A "lively" wine, without the effervescent contribution of the perlage, would lose much of its character.
