NONSO2 Rosso Umbria IGT BIO from Di Filippo Azienda Agraria represents one of the most innovative interpretations of natural Italian viticulture. Produced without the addition of sulfur dioxide, this wine is made from 100% Barbera, a novelty introduced with the 2023 vintage to harness the natural freshness and acidity of the grape, essential characteristics for obtaining a stable wine without using added sulphites.
The Di Filippo winery, located between Cannara and Montefalco, is one of the most representative organic farming realities in Umbria. The vineyards are cultivated following sustainable and agroforestry practices: horses are used for work between the rows, while geese naturally contribute to weeding and fertilizing the soil, promoting biodiversity and respect for the ecosystem. All wines are also vegan, thanks to a production process that does not involve the use of animal proteins.
Vinification takes place with whole clusters, without moving the wine during maceration, thus naturally limiting oxidation and enhancing the aromatic profile of the grapes. Aging continues for at least 6 months in steel tanks on fine lees. The wine is neither filtered nor stabilized, thus maintaining all its vitality and authenticity; any sediment at the bottom of the bottle is completely natural.
The result is an intense, modern, and surprising red, capable of combining structure, freshness, and drinkability. An ideal choice for those who desire a natural, organic, and environmentally friendly wine without compromising on elegance and quality.
