Description |
This noble Pinot Noir grows in vineyards at medium-high and high altitudes between 450 – 600 m above sea level. Here, descending air currents cool the temperature even in midsummer. It has been cultivated in our area since the mid-19th century, especially the older vineyards give a structured and elegant Pinot Noir. |

Winemaking technique |
Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at controlled temperature and delicate movement of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). |
Refinement |
For the refinement in barriques, one third of the barrels are new. Assemblage three months before bottling. |

It pairs very well with roe deer back with apple and red wine puree and ricotta dumplings, milk-fed veal back with poppy seeds, sirloin of beef in foil with herbs, mashed potatoes and chestnut ragout, veal liver with butter and thyme, veal paillard with Mediterranean vegetables, or even barley or smoked venison with cranberry and horseradish sauce. |
