January and February 2021 were characterized by a couple of weeks where minimum temperatures remained steadily below 0°C, contributing to delaying the vegetative awakening, despite March having been a decidedly mild month. In fact, the Sauvignons began to sprout 8 days later than the historical average. The first vegetative phases were slowed down by a cold May with rainy days, while the June sun stimulated rapid growth of the vegetation, developing a correct leaf surface. The flowering of the Sauvignon ended within a few days in mid-June, on sunny and dry days. July and August were months characterized by significant temperature variations, with sufficient rainfall to hydrate and maintain correct vegetative-productive development in all varieties. Never before have the Sauvignons been harvested at such different times. The first plots already at the end of August, rich in citrus aromas and with important acidity. The last ones in the third decade of September, equally intensely perfumed but softer on the palate. |

Winemaking and Refinement |
A small portion of the pressed grapes (15%) benefits from a short cold maceration protected from the air. The juice obtained from the soft pressing of the grapes is left to settle for 24-48 hours. Alcoholic fermentation then begins on clear must, conducted at 18-20°C for 15 days. The vinification is carried out in steel containers, keeping the wine at low temperatures, thus avoiding malolactic fermentation. After fermentation the wine rests for 4 months on the noble lees that are frequently put in suspension. |

Perfume |
It explodes on the nose with boxwood, lychee and acacia flowers. It is a wine with pressing aromas, in fact more mature notes of white melon and fig arrive that accompany us in the tasting. |
Taste |
The flavour is lively, intense, with a pleasant aftertaste of citrus fruits and broom flowers. |
