This passito wine is born in the vineyards of the Di Filippo farm in the hilly lands of the Umbrian countryside. For over twenty years the company has been committed to producing wines in Organic Farming with passion and conviction. Vegan ! Wine whose winemaking process does not include the use of animal proteins. The grapes are produced in a vineyard cultivated almost entirely with horses. It is an agroforestry technique that is based on the synergy of multiple crops and livestock activities.
"...Olga; the first horse that worked our vineyard..." The intent to vinify white grapes in appassimento as well. An experiment born with a small vineyard cultivated with Incrocio Manzoni. What can I say?! I've never drunk anything like this! Hats off to Di Filippo! |
