Description

Muffato della Sala is produced with botrytized grapes harvested in late October - early November, to allow the morning fogs to favor the development of Botrytis Cinerea or “noble rot” on the bunches. This mold reduces the water content of the grapes and concentrates sugars and aromas, giving Muffato della Sala a harmonious and unmistakable taste.
The first vintage was 1987 and was composed of varieties such as Sauvignon Blanc (50%), Grechetto (30%) and Drupeggio (20%). Subsequently the composition changed until reaching the current one. Muffato della Sala is a fascinating wine, expression of a unique terroir, in very limited quantities.

2020 will be remembered as a generally dry year.
The winter, almost completely devoid of rain, saw the predominance of
temperatures not too rigid. The spring climate, arrived
slightly later than in previous years, it was
characterized by mild days and temperatures above

seasonal averages, with the exception of some cooler periods at the beginning of April. Subsequently, starting from the month of June until almost mid-August, the warm and dry climate determined an excellent ripening of the grapes.
The grapes in the months of October and November, thanks to the frequent fogs
morning, they gradually became covered with "noble mold",
concentrating its sugars and increasing its aromatic complexity.
The harvest began towards the end of October with the Traminer, it is
continued with Riesling, Sauvignon Blanc and Sémillon
concluding towards the end of November with the Grechetto.

Winemaking and Refinement The grapes come from the Castello della Sala vineyards, located between 200 and 450 meters above sea level on clay soils, rich in marine fossils. The grapes were harvested manually, returning to the same vineyard several times depending on the state of the grapes. After being transferred to the cellar, the bunches were further selected on a sorting belt. A light pressing without destemming followed. After pressing, the must fermented for 18 days at a temperature of about 17 °C. The resulting wine, still sweet, was transferred to French oak barriques (Alliers & Tronçais) where it matured for about 6 months before continuing to refine in steel for a further 2 years.


Tasting notes

Muffato della Sala 2020 is characterized by a bright and intense golden yellow color. On the nose it opens with a complex and harmonious bouquet, with fragrant aromas of dried apricot and candied fruit,
accompanied by hints of honey, cinnamon, saffron and nougat. On the palate it is velvety, pleasantly dense, full-bodied, with hints of honey and citrus peel that precede a pleasantly savoury finish.
