Description Pinot Grigio represents only a very small part of Josko Gravner's production. Only in exceptional years is a Reserve produced separately, which is not even mentioned on the company website gravner.it. The processing of the grapes and the maturation are the same as for Breg: the bunches are fermented with spontaneous yeasts in amphorae sunk into the ground. The must is left in contact with the skins and its yeasts for four to five months before being pressed. It then returns to the amphorae and matures there for another five months. This is followed by a period of aging in large barrels that lasts from five to six years. The wine is bottled without filtration.

Wine with limited production of between 1000 and 1500 bottles.

The 2009 vintage will be the penultimate one we will see. It will be followed by the 2011, after which it will no longer be marketed, since the Njiva vineyard from which it comes was uprooted in 2011. Gravner will no longer produce Pinot Grigio.

The grapes come from a cultivation that goes above the organic and biodynamic schemes imposed by regulatory bodies.
Cultivation, like winemaking, is done with the utmost respect and with interventions reduced to the essential where the use of technology and chemicals are totally absent.

The long rest and the long wait aim to elevate the wine towards full maturity and the extraction of the maximum expression of the vine.

Organoleptic analysis To the eye it appears an intense orange but clear and free of suspended residues.
The nose is thus characterized by broad and layered sensations that evolve hour by hour and continue for days and weeks after opening. However,
hints of aromatic and wild herbs such as sage, oregano and rosemary can be perceived; notes of yellow-fleshed fruits of apricot and peach; withered flowers. Intense sensations of beeswax, candied citrus, tree resins and spices. Pleasant alcoholic hint more or less present based on the time of opening.
The unusual tannicity is due to the very long maceration on the skins carried out in amphora . On the palate it expands three-dimensionally, full and deep, endowed with a vital freshness and a valuable balsamic memory that recalls maritime environments, the woods and undergrowth.
