Description

2020 will be remembered as a generally dry year. The winter, generally without rain, was characterized by temperatures that were not too cold. The spring climate, which arrived slightly later than in previous years, was marked by mild days and temperatures above seasonal averages, with the exception of some cooler periods at the beginning of April. Subsequently, starting from June until almost mid-August, the warm and dry climate led to early ripening of the grapes. The time for the harvest was chosen by seeking the maximum expression of the fruit. The Chardonnay harvest for Cervaro della Sala began towards the end of the third ten days of August with healthy, ripe grapes characterized by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place after about fifteen days, towards mid-September.

The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and refinement in barrique with the first vintage in 1985.

Winemaking and Refinement The grape harvest is carried out in the very early hours of the morning so that the fruit reaches the cellar intact and not stressed by the higher temperatures of the day.
The musts, coming from the maceration of the grapes at 10 °C for about four hours, are transferred by gravity into decantation tanks where they become clear before being transferred into barriques. It is here that the alcoholic fermentation takes place followed by the malolactic one.
Usually after five months the Chardonnay is ready to be transferred back into steel to join with the Grechetto, which is vinified separately and in the “absence” of wood. Subsequently the Cervaro della Sala ages for a few months in the bottle in the historic cellars of Castello della Sala before being released onto the market.

Color

To the eye it has a bright straw yellow colour with some greenish hues.

Perfume On the nose it expresses slightly toasted notes accompanied by citrus and exotic fruit aromas and very light buttery sensations.

Taste

On the palate it expresses an excellent flavour and freshness, with hints of chamomile, white fruit and flint followed by a pleasant persistence and depth of taste.
