The “25 years” of Arnaldo Caprai is an icon in the world of Sagrantino di Montefalco. The winery has been one of the main promoters of the restart of this variety of native Umbrian grape, Sagrantino, to which it has linked its name inextricably in the name of excellence with patient work and great tenacity. The “25 anni” was vinified for the first time in 1993 to celebrate the 25th anniversary of the birth of the winery. A classy wine. Arnaldo Caprai Montefalco Sagrantino “25 years” has a dark and impenetrable ruby red color. As dense to the eye as it is to the nose, rich in a layered and varied complexity . Notes of black fruit jam, rose and cocoa follow one another, on a spicy range of pepper, cloves and cinnamon; a balsamic note of pine resin finishes a bouquet that is nothing short of broad. In the mouth, the class is manifested by the softness of the tannin, which does not affect the persuasive character of the sip but, on the contrary, enhances it. A good freshness denotes a capacity for evolution yet to be discovered. |
| Vinification and refinement | Following the manual harvest, the bunches are transported to the cellar where they are pressed. The resulting must is left to ferment in steel containers. The refinement phase consists of an initial period of maturation in barrique , which lasts 24 months, and a subsequent rest in the bottle for approximately 8 months. |
