Winemaking and Refinement
|
The Rosé Brut “Cuvée Prestige” by Ca' del Bosco is born from a careful assembly, which gives the emotion of a great Franciacorta. The Pinot Noir grapes are delicately pressed with a brief contact with the skins and the must is then vinified in white. The Chardonnay is fermented separately. The base wines mature in steel for 8 months before being assembled to create the final cuvée. The refermentation takes place in the bottle, with a minimum refinement on the lees of 36 months.
