Grapes used

80% Sauvignon Blanc 20% Sémillon
Origin and Name Umbria - Umbria Bianco IGT
Winemaking and Refinement The bunches, harvested by hand, were immediately transferred to the cellar and cooled before pressing in order to preserve the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 °C to allow for natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature no higher than 16 °C. Once this operation was completed, the wine was stored at a temperature of around 10 °C to prevent malolactic fermentation and to preserve its organoleptic characteristics unaltered. The two varieties were then combined so that one could “complete” the other. Fresh, vertical, slightly aromatic the Sauvignon Blanc, soft and tropical the Sémillon.
