Winemaking technique
|
Spontaneous fermentation in small concrete tanks for approximately 15/18 days with several daily pumping overs and délestage. Grapes vinified and refined separately and finally combined to form this full and warm wine.

Refinement

18-24 months in first, second and third passage barriques. Finally, it rests in the bottle for at least a year.
