Description

The new denomination “Sant'Antimo” is permitted exclusively for wines obtained from grapes grown in the Montalcino area, a further enrichment to its already existing preciousness.

This wine is dedicated to the innovative spirit and vision of Count Alberto Marone Cinzano, when in the early 80s he planted Cabernet Sauvignon in the hills of Montalcino. This wine is the pure expression of the best grape variety in the world married to the climate of our unique “terroir”. In the glass you can perceive all the dry and hot intensity of the Mediterranean summer and if you open your eyes, you might even hear the crickets chirping in the background.

The winter was scarcely rainy and with low temperatures in the months of January and February. Spring precipitations in the seasonal average allowed to create water reserves to overcome the hot months of July and August. The month of September was mild, with good temperature variations between day and night, favoring the perfect ripening of the grapes.

Origin

Montalcino - Siena – Collina Sant'Angelo in Colle. Hilly terrain with south-southwest orientation.

Grapes

Cabernet Sauvignon, clones of Bordeaux origin with sparse bunches and small dimensions. The choice of harvest time is based on the search for a balanced maturity. The harvest, exclusively manual, allows a rigorous selection of the best bunches both in the vineyard and in the cellar.

Winemaking Fermentation takes place in 50 hl steel vats. Maceration lasts about 20 days at a controlled temperature of 25-28°C. with 2 daily pumping overs and three long delestages on the third, fifth and seventh day of fermentation. Malolactic in steel. First racking directly into barriques in March-April 2016.

Aging Aged for 18 months in medium toasted French oak barriques (95%) and American oak (5%). Stability was obtained during the second winter, leaving the wine in barriques in the seasonal cold, in order to have a natural clarification. Bottling was followed by bottle aging.

Color Ruby red with intense purple reflections.

Olfactory sensations
Broad, rich and complex, with unique notes of ripe red fruits (mulberry and berries) and delicate hints of vanilla and toasting.
Taste sensations A wine of great structure and intensity, on the palate it highlights all its enveloping personality, with velvety and mature tannins and a long persistence.
