Bubbles


The formation of bubbles, also known as "perlage" by those in the know, is a necessary condition for that important macro-category that includes sparkling, semi-sparkling and spumante wines. It would be unthinkable to have a 'happy' wine without bubbles, which in any case tend to have a marked influence on the taste, making the sensation on the palate clearly different compared to still wines.
