Description

The name “Mater Matuta” derives from the ancient Italic divinity, goddess of dawn, protector of nascent life and fertility. The wines of the Casale del Giglio company and in particular the Bordolese Cut “Mater Matuta”, are characterized by the right sugar and alcohol content and good fixed acidity, which helps to enhance the aromas and maintain them over time.

Grapes used

Syrah (85%) and Petit Verdot (15%)

Winemaking and Refinement

The grapes for both varieties are harvested when perfectly ripe, sometimes slightly withered for the Syrah.

The vinification involves different techniques for the two grape varieties. Syrah ferments with indigenous yeasts using the submerged cap technique for a period of 18–20 days, during which periodic “délestage” occurs, especially in the initial phases. Syrah thus gives Mater Matuta complexity and character, with sweet tannins and intense aromas of morello cherry and spices. For Petit Verdot, on the other hand, vinification occurs using fullers that allow maximum extraction of tannins and polyphenolic substances. The result is a Petit Verdot with great body and structure that lends itself well to long aging. After careful racking, where the movement of the marc occurs only by gravity, the wines are placed separately in new barriques for 22–24 months. This is followed by a further 10–12 months of refinement in the bottle.

Organoleptic examination

Dark, dense ruby; balsamic hints stand out on the nose, followed by dark coffee beans, violets and ripe morello cherries.
Finally, a strong spiciness of coriander, nutmeg and cinnamon emerges.
Mouth that envelops and seduces thanks to a perfect tannic texture and a well-integrated freshness.
Fruity and persistent finish.
