Description |
“Passito Sicilia” has a golden yellow color with amber reflections, and on the nose it offers a fruity bouquet with notes of apricot, dried figs, citrus fruits, dates and honey. The taste is harmonious, sweet and delicate, fresh and delicately alcoholic. A dessert wine that pairs perfectly with cannoli, cassata, mascarpone desserts and ice cream; excellent with blue and mature cheeses. Excellent meditation wine. |

Winemaking and Refinement |
The hand-picked and selected grapes are left to dry in the sun for 12 – 14 days, once dried they are mixed with fresh grapes and immediately pressed to obtain the dense and sugary juice that will then be fermented in stainless steel tanks. Once the desired alcohol and sugar content is reached, fermentation is stopped by drastically lowering the temperature. The resulting wine is left to refine in steel for at least 6 months.
