Description

The 2016 vintage, marked by a winter with frequent rainfall and repeated and marked drops in temperature, was characterized by a not too mild spring. The frequent but not abundant rainfall between the end of April and mid-June, despite the significant drops in temperature recorded in the first ten days of May, favored the early and vigorous vegetative development of the Chardonnay and Grechetto. The initial slight advance of the vegetative phases gradually rebalanced itself in July. A hot summer with good temperature variations between day and night favored the development of the aromatic components of the two varieties. The harvest of the Chardonnay for the Cervaro began in the third ten days of August followed by the harvest of the Grechetto, which is naturally two weeks later, and ended around mid-September.

The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and refinement in barrique with the first vintage in 1985.

Winemaking and Refinement The grape harvest is carried out in the very early hours of the morning so that the fruit reaches the cellar intact and not stressed by the higher temperatures of the day.
The musts, coming from the maceration of the grapes at 10 °C for about four hours, are transferred by gravity into decantation tanks where they become clear before being transferred into barriques. It is here that the alcoholic fermentation takes place, followed by the malolactic one.
Usually after five months the Chardonnay is ready to be transferred back into steel to join with the Grechetto, which is vinified separately and in the “absence” of wood. Subsequently the Cervaro della Sala ages for a few months in the bottle in the historic cellars of Castello della Sala before being released onto the market.

Tasting notes

Cervaro della Sala 2016, with a bright straw yellow color with some greenish reflections, expresses toasted notes, citrus and exotic fruits with light buttery nuances. On the palate it stands out for its freshness, flavor and a pleasant persistence. Its youth, already pleasant and inviting, lets us glimpse a great potential that will express itself fully with the passing of the years.
