Description

The 2021 vintage was characterized by a generally cold winter and a generally regular spring. At the beginning of April, with budding already underway, a sudden drop in temperatures caused a reduction in production, without in any way affecting the future quality of the grapes, as well as a vegetative delay of about two weeks. A slightly rainy but at the same time cool May and a summer with sunny days, characterized by a good temperature range between day and night, allowed the vines to recover the accumulated delay and to guarantee the correct ripening of the bunches. The good weather starting in August allowed us to carefully select the best grapes, choosing the moment of harvest in order to seek the maximum expression of the varietal aromas. The harvest of Chardonnay for Cervaro della Sala, to be considered of exceptional quality but characterized by a reduced production, began during the third week of August with healthy, ripe grapes characterized by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place after about fifteen days, towards the middle of September.


The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and refinement in barrique with the first vintage in 1985.

Winemaking and Refinement The winemaking cellar is built to take full advantage of the principle of gravity and allows the grapes to be managed and macerated without undergoing mechanical interventions resulting from pumping. The grapes are harvested in the very early hours of the morning so that the fruit reaches the cellar intact and not stressed by the higher temperatures of the day. The musts, coming from the maceration of the grapes on the skins at 10 °C for about four hours, are transferred by gravity into decantation tanks where they become clear before being transferred into barriques where the alcoholic fermentation takes place followed by the malolactic fermentation. In February the Chardonnay is ready to be transferred back into steel to join with the Grechetto, which is vinified separately in the “absence” of wood. The Cervaro della Sala then ages for a few months in the bottle in the historic cellars of the Castello della Sala before being released onto the market.
Tasting Notes
Cervaro della Sala 2021 has a slightly light straw yellow color with some greenish reflections.
The nose expresses sensations of chamomile, white flowers and flint. On the palate it is savory, vibrant, fresh and characterized by notes of vanilla, citrus and light hints of hazelnut butter. A wine with a Mediterranean style and excellent aging capacity.
