Description

This Sauvignon del Collio wine takes its fascinating and evocative name from the homonymous vineyard from which the grapes that make it so special originate.
The first Sauvignon R3 vines were planted later, in 1984, by Gianni and Giorgio Venica. After carefully observing the soil and climate varieties of the Cerò hill, they became aware that the north-west exposure was ideal for obtaining wines with a good aromatic imprint.

Sauvignon "Ronco delle Mele" is an intense wine, rich in varietal aromas, aged in small part in oak barrels. The aromas recall tropical fruit, citrus fruits and tomato leaf, with smoky nuances. The sip is full-bodied and mineral, harmonious and generous.

Winemaking and Refinement

Grapes hand-picked and destemmed between 3 and 22 September 2021.
After harvesting, the grapes are macerated for about 20 hours at a temperature of 11°/12° C in special containers, protected from oxygen with innovative systems through the recycling of their own fermentation carbon, in order to reduce the contribution of antioxidants. The must ferments and ages on the yeasts for 5 months partly in large wooden barrels of 20/27 HL and partly in steel containers.
The wine is then assembled and bottled to coincide with the full moons between March and June 2022.

Organoleptic examination

Dazzling in shades of green gold.
The olfactory complexity of this wine is incredible, as are the magical sensations that derive from it. A set of elegant and complex sensations are released on the nose. The wine opens with vegetal notes that range from the classic tomato leaf to flowering elderberry; then delicate citrus nuances of cedar and pink grapefruit peep out. The finish is elegant, with a slight reference to the minerality typical of this territory.
At the sip, elegance reigns supreme. The vegetal notes are amplified in a pas de deux of freshness and flavor. In the mouth, a velvety taste-olfactory intensity. It represents the firm will to produce a very varietal and flavorful wine, impeccable in precision and stylistic rigor. A long future awaits it, in the cellar together with the wines of the heart.

The list of dishes that this Sauvignon Collio pairs perfectly with could be endless: eggs with truffles, crespelle with porcini mushrooms, ravioli with lobster, grilled shrimp, risotto with asparagus and seafood. Shellfish to infinity… a risotto with shrimp and orange scent, a cream soup with leeks and wild garlic or an omelette scented with aromatic herbs.
